Can someone explain what clustered servers are? I've seen many of the dedicated host companies are now offering this service and judging from the prices it must be something special. Can anyone help?

A Clustered server configaration is two computers or more serving a web site. When a request comes in for a page off of the site it is given to the least active server. This means that your web site can get as popular as you like and as long as you have enough servers won't fall down. This also means that if a server goes down then the site will continue as the other servers will take the load while the server is rebooted. In essence you should have a 100% uptime and a site which is faster as each page request is given to the server with the least to do.
