How would we go about setting up VPS accounts as we are beginning to get interested into setting a few up.

I seems to be about the best one out there at the moment - though it comes with a bit of a pricetag on it. Plesk is supposedly owned by the same company now so that might come in handy when looking at building out VPS servers.

Had the guys from there give me a terminal server walk through this past week. Very impressive. Make sure you call tha sales dept, as they are willing to "negotiate", believe me it will be worth the call.
