is it possible to change your name servers to your own personalised ones, like microsofts?
if so can you suggest anyone that allows this?

Most hosts allow this. Just ask whichever host you want to go with if they offer custom nameservers. If they do, then you can configure it at the control panel and at the domain registar.

Any VPS would give you this ability since you can install your own DNS server and use it.

Name server is something that you need to configure at the domain level. You need to talk to your domain registrar and get information on how to do it. Most registrars will allow this. It will take 24-72 hours for your name servers to take effect.

One thing to be aware of if you host your own DNS is that you lose DNS redundancy. While this isn't normally a problem for your website (as if your server is down people can't get to your website anyway) in some cases email will get bounced rather than queued if your DNS is down.
At Network EQ we'd always recommend having redundant DNS servers in different locations so that if one goes down your email is still queued and not lost!
